Qualifications
- minimum 3 years as a sous chef in a fine dining restaurant (union experience strongly preferred)
- Familiar with Pacific Rim, Japanese, or Asian-influenced techniques/cuisine
- Proficient with computer systems and standard kitchen equipment
Responsibilities
- Supervise and train kitchen staff, schedule cooks, and support chefs
- Conduct daily reviews of food and labor costs, maintain recipe costing sheets
- Plan menus, prepare and cook food items, and manage supply requisition
