Baptiste is a new Parisian restaurant opening at The Eve, Wunderlich Lane, and we’re looking for a full-time Sous Chef to join the opening team. Built around great food, warm hospitality and the unmistakable energy of Paris, Baptiste will be a confident, generous restaurant with its own sense of style.
You’ll work closely with the Head Chef & Senior Sous across preparation, service, kitchen systems and team development, helping set the standards that will shape Baptiste well beyond opening day. Baptiste is part of The Apollo Restaurant Group, the team behind The Apollo, Cho Cho San and Olympus Dining in Sydney, along with Greca and Yoko Dining in Brisbane.
The role
This is a hands-on leadership role for a strong chef who enjoys being in service, developing people and keeping a kitchen calm and organised.
You’ll support the Head Chef with:
- Leading the kitchen team through preparation and service
- Maintaining consistency, presentation and food quality
- Training and developing chefs across the brigade
- Managing ordering, stock rotation, food safety and kitchen organisation
- Supporting rostering, labour management and food cost control
- Building clear systems and strong working habits from the opening
- Creating a respectful kitchen where people communicate well and take pride in their work
About you You’ll already have experience as a Sous Chef or be a strong Junior Sous Chef who’s ready for more responsibility.
You care about the details, but you don’t lose sight of the people around you. You can lead a busy service without adding unnecessary noise, give clear feedback and step in wherever the team needs you.
You’ll bring: - Experience in a busy, quality-led restaurant kitchen

- Confidence leading and developing a team
- A solid understanding of food safety, ordering, stock and kitchen operations
- A calm, consistent approach during service
- Full-time availability, including evenings and weekends
