Baptiste and Tenjo have just joined The Apollo Restaurant Group at Wunderlich Lane, and our next stop is Manly. We're looking for an experienced Bar Manager to join our opening leadership team and help bring our newest restaurant to life.
This is your chance to take ownership of the bar from day one, build a brilliant team and create a drinks experience that becomes as much a reason to visit as the food.

The opportunity
As our Bar Manager, you'll take the lead on everything behind the bar, working closely with the General Manager and wider leadership team to create a drinks offering we're proud of.
You'll be responsible for:
- Building, training and leading a talented bar team from the ground up
- Helping shape the cocktail and beverage offering, bringing your own knowledge, creativity and ideas
- Leading busy services and creating a bar experience that keeps guests coming back
- Managing stock, ordering, beverage costs and the day-to-day bar operation
- Creating a team culture where people feel supported, challenged and excited about what they do
Who we're looking for
You'll be an experienced Bar Manager or senior bartender ready to take the next step, with a strong understanding of cocktails, spirits, wine and what makes a great bar experience.
You'll love being on the floor, have a genuine passion for hospitality and know how to bring out the best in your team.
We're looking for someone who's creative, commercially minded and excited by the opportunity to put their own stamp on a new venue.
