Silvestro Butchers is a family-operated butcher in Osborne Park, Perth, offering fresh, locally sourced meats, quality cuts and ready-to-cook products, with a strong focus on quality, value and customer service.
  
Silvestro Butchers is now looking for an experienced Butcher to join their team.
  
The right candidate will be responsible for:

• Preparing fresh beef, lamb, pork and chicken for retail sale by deboning, trimming, portioning, cutting, slicing, mincing and grinding meat according to customer orders and display requirements;
• Preparing and presenting a variety of meat cuts for the refrigerated display cabinets, ensuring products are appropriately portioned, trimmed and presented for sale;
• Producing ready-to-cook meat products by crumbing, marinating, seasoning and preparing selected cuts using appropriate ingredients and preparation techniques;
• Selecting and preparing suitable meats and ingredients for the production of sausages and other small-goods sold through the butcher shop;
• Operating and maintaining meat-processing equipment including mincers, grinders, mixers, tenderisers, band saws, slicers and sausage-filling machinery;
• Preparing marinades, seasonings and flavouring mixtures by measuring and combining spices, herbs, salts and other ingredients for different meat products;
• Filling and preparing sausages using appropriate machinery and ensuring consistent size, quality and presentation of finished products;
• Receiving and inspecting fresh meat deliveries, checking product quality and preparing, dressing and storing meat appropriately prior to display or further processing;
• Advising customers on different cuts of meat, suitable quantities, preparation methods and recommended uses according to their cooking requirements;
• Maintaining attractive and well-stocked meat displays while rotating products and monitoring freshness, quality and appropriate storage temperatures;
• Following food safety, hygiene and sanitation procedures when handling, processing, storing and displaying fresh meat and prepared products;
• Monitoring meat and ingredient requirements and assisting with production planning to ensure sufficient quantities of fresh cuts, sausages and ready-to-cook products are available for customer demand.

About you:

• At least 1 year of experience as a Butcher;
• Strong knowledge of meat preparation, cutting, deboning, trimming, mincing and portioning techniques;
• Ability to identify different cuts of beef, lamb, pork and poultry and advise customers on their appropriate uses;
• Competence in operating meat-processing equipment such as mincers, grinders, slicers, tenderisers and sausage-filling machines;
• Knowledge of sausage making, marinating, seasoning, crumbing and preparation of ready-to-cook meat products;
• Strong understanding of food safety, hygiene, sanitation and safe meat-handling procedures;
• High level of attention to detail to ensure consistent portion sizes, product quality and presentation;
• Good customer service and communication skills when assisting customers with meat selection and preparation advice;
• Ability to manage stock rotation, storage temperatures and freshness of meat products;
• Strong organisational and time management skills to prepare products efficiently in a busy retail butcher environment;
• Ability to work effectively both independently and as part of a butcher shop team.

Job Type: full-time, permanent;
Salary: $79,000 - $83,000
