The Apollo has been one of Sydney's most loved Greek restaurants for over a decade. Whole lambs on the spit, saganaki that gets ordered at every table, a wine list that takes Greece seriously. We're after an Assistant Restaurant Manager to run the floor alongside our RM and help lead a team that genuinely cares about hospitality.

What you'll actually do

• Lead FOH through service, set the tone, hold the standard
• Be the person guests remember and the one your team looks to when it gets busy
• Support rostering, training, stock and compliance
• Help drive the hundred small things that keep a restaurant of this size moving

What we're looking for

• At least 2 years as an Assistant Restaurant Manager (or strong 2IC) in a comparable venue — high volume, quality-driven, full table service
• Solid wine knowledge and a genuine interest in food
• Confident training and developing FOH staff
• Calm under pressure, holds a room without raising their voice
• RSA essential
• Greek or Mediterranean experience a bonus, not a requirement
