Olympus Dining is looking for a skilled and reliable Casual Butcher to join the team. This is a hands-on role for someone who takes pride in their craft, works with precision, and enjoys being part of a kitchen that values quality and consistency.
The Role
You'll be responsible for the daily preparation and breakdown of lamb, making sure every cut is handled with care and ready for service. The role suits someone organised, reliable, and comfortable with early starts, with shifts beginning from approximately 5:00am.
What You'll Be Doing
Breaking down whole lamb and portioning cuts after ageing
Bandsaw work, deboning, and preparing skewers
Making sausage mince, meatballs, and seasoned mixes
Handling offal and maintaining the dry ageing room
Receiving deliveries, checking stock, and weekly stocktake
What We're Looking For
Butchery experience, ideally with a focus on lamb
Strong breakdown and portioning skills, with a good eye for consistency
Confidence on the bandsaw and with hand tools, plus a solid understanding of dry ageing
Pride in the finished product and real attention to detail
Reliable, punctual, and a clear communicator in the kitchen
