Our client is based in Nashville, Tennessee, is a leading food manufacturer specializing in a wide range of high-quality products. They are currently looking for Retort Lead.
Primary Purpose: Maintaining the flow of product and carrying out process control checks to ensure compliance to operating standards. Also, will assist Production Supervisor in leading and training Retort employees.
Job Description
Role and Responsibilities
- The Retort Lead is responsible for overseeing the functionality of a team by providing guidance and instruction.
- It is crucial for a Team Leader to lead employees by example.
- Responsible for full operation of retorts and filling departments (i.e., read charts, set valves, accordingly, read gauge, & thermometers getting Internal Temperature (IT) of the can. (Filling cans to correct weight)
- Responsible for keeping detailed records on retort logs and notify appropriate individuals of any deviation in normal venting and processing procedures.
- Assist in loading the baskets in the retorts following Good Manufacturing Practices (GMP).
- Training Retort Operators on all Retort functions.
- Assist Production Supervisor in leading employees and responsible for training them, by clear communication of the purpose of the work items and the deadlines to ensure the employees understands what is expected.
- Manage necessary paperwork:
- Must ensure product mapping, number of baskets is matching what’s in the retort in the right color on the tags to the product.
- Once the order is filled how many pots were ran and how many cans were produced.
Specific Tasks: - Start-up retorts. Pre-op checks of retorts and programs to be entered into computer for products being produced.
- Retort Lead will enter the correct recipe into the computer for the product that is being cooked, by verifying
- Perform a visual inspection of the can seals every thirty minutes and verify code dates and product code on cans.
- Carry out tasks as instructed; comply with the correct operation procedure in conformance with (Hazard Analysis and Critical Control Points HACCP regulations quality manual.
- Complete detailed daily retort logs and report all deviations to Supervisor and QA Supervisor.
- Ensure clear concise marking of sterilized product. (I.e., after cooking make sure the retort is fully filled with sterilized water).
- Understand the bell signals (from Kitchen) for the changeover.
- If there is a change over on the product, ensure the filler is clean out and ready for the next product correctly.
- If there is a can size change, make sure the line is clear from the previous cans to ensure no mix up.
- If the supervisor is not present the finished product paperwork needs to be verified and signed by the Retort Lead.
- Responsible for Preventative Maintenance. Minimal mechanical abilities (i.e., clearing a jam at the seamer or filler area or lubing the doors or handles of the retort machine.
- Responsible for maintaining efficiencies set forth by plant manager.
- Responsible for keeping area organized and cleaned.
- Responsible for following the machine specific written instructions.
- CCP’s (Critical Control Points) is the retort cooking.
- Operate a forklift safely.
- Other duties as assigned.
- Must adhere to all company policy’s (including Meal and Rest Periods)
- Must ensure the employees in the department are following all company procedures and policies.
- Must notify supervisor of any violations.
- Must wear Personal Protective Equipment (PPE) and notify supervisor of any employees violating the policy.
Qualifications and Education Requirements - Knowledge of GMP standards.
- High School Diploma or GED
- Basic Math and ability to read charts and valves
- May require up to 6 months of on-the-job training
- Must pass the “Better Processing” class administered by the Company.
Working conditions: While performing the responsibilities of the job, the associate must be physically able to operate a variety of machinery and equipment. The associate is often required to stand, walk, reach with arms and hands, climb or balance, and to stoop, kneel, crouch or crawl. Must be able to elevate to heights of thirty (30) feet or higher and lift seventy-five (75) pounds or more. While performing the duties of this job, the associate is often exposed to moving mechanical parts and vehicles. The associate is also exposed to a variety of spices, varying weather elements, and frequently exposed to hot and humid temperatures. The noise level in the work environment is usually noisy. Some floors may be wet and slippery. Proper footwear and other PPE are required.
- Must be able to push 200 lbs.
- Ability to stand for duration of shift
- Ability to be always aware of surrounding environment and conditions
