Open Pantry Co. is proud to be partnering with Risdon Hotel, a well-established local pub in the north, to recruit a hands-on and commercially minded Head Chef.
 
The Risdon is a true community venue, classic pub offering, loyal locals, strong trade and consistent demand. This role suits a chef who understands pubs inside out and knows how to balance quality, speed and margin in a busy environment.
 
About the Role
As Head Chef, you'll take ownership of the kitchen and lead from the front. You'll manage daily service, team performance and food consistency, while driving wage control, GP targets and operational standards.
This is a practical, floor-based leadership role, not an office job. You'll be visible in service, mentoring your team and setting the tone for standards and culture.
 
Key Responsibilities

• Full kitchen leadership and day-to-day operations
• Menu execution and seasonal input
• Rostering, wage control and labour management
• Food cost management and supplier relationships
• Stock control and ordering
• Compliance with food safety and WHS standards
• Training and development of kitchen staff

What We're Looking For

• Proven experience as a Head Chef or strong Sous chef ready to step up
• Background in pub/bistro-style kitchens
• Strong understanding of GP, wages and commercial performance
• Calm, practical leadership style
• Ability to build and retain a stable team
• Food safety certification and full Australian working rights
