Senior Venue Manager — Landmark Pub (Eastern Suburbs, Sydney)

Open Pantry Co is partnering with a much-loved Eastern Suburbs pub to hire a Senior Venue Manager who runs a tight floor, sharp bar, compliant gaming room, and a team that knows what great looks like.

$90,000-$100,000 base + super + quarterly performance bonus (aligned to experience and results)

What you'll do

• Lead the floor & bar: lock in sequence of service, standards and pace every shift; be visible and decisive
• People & onboarding: hire well, run structured briefings, coach supervisors, and hold a firm line with casuals
• Rostering & labour: build costed rosters, manage peaks/swaps, and report weekly on labour % vs sales
• Gaming operations: own compliance/presentation; plan activations; track performance daily/weekly with clear actions
• Stock & GP: tighten ordering, variances and waste; partner with suppliers; report GP/stocktake outcomes with next steps
• Data & reporting: deliver simple weekly dashboards (e.g., gaming TO, stock KPIs, labour, guest feedback) and act on them
• Marketing & activations: support venue initiatives (sport/event days, supplier activations) and measure ROI
• Cross-venue alignment: work closely with bistro leadership on guest flow, bookings and shared standards
• Use the tools: SevenRooms (reservations/floor plan) and Jensen POS (reporting) confidently

What you'll bring

• Proven Venue Manager / Senior VM experience across busy, multi-space pubs (bar + floor; gaming exposure ideal)
• A coaching mindset that grows supervisors and sets a consistent service language
• Commercial IQ: confident with rosters, GP levers, supplier terms, and weekly performance rhythms
• Compliance confidence (gaming + venue standards) and a calm, credible on-shift presence
• Comfortable turning data into actions; clear communicator who sets high standards
