The Chef de Cuisine leads daily kitchen operations at Lucy's, an elevated, high-volume Italian neighborhood restaurant within South Bay Hospitality Group. This role requires a hands-on culinary leader with strong Italian cuisine experience, pizza oven knowledge, and the ability to maintain exceptional food quality while managing food costs, labor, and kitchen performance.
Qualifications

• Previous Sr. Sous, Executive Sous Chef, or senior kitchen leadership experience in a high-volume restaurant
• Strong background in Italian cuisine, scratch cooking, pizza production, and pizza oven operations
• Proven ability to manage, labor, inventory, and kitchen scheduling
• Excellent leadership, organization, and team development skills

Responsibilities

• Oversee daily BOH operations, ensuring consistent food quality and efficient execution
• Manage kitchen staffing, training, scheduling, and performance
• Maintain food cost controls, purchasing, inventory, and waste management
• Oversee Italian menu execution, including pasta, pizza, and scratch preparations
• Collaborate with restaurant leadership to ensure smooth service and a positive kitchen culture
