An established full-service restaurant in New York City is seeking a hands-on Kitchen Manager to lead daily BOH operations. This opportunity combines active line cooking, team leadership, and operational accountability in a scratch kitchen with an established menu. The manager will work closely with ownership and develop the independence to oversee the kitchen when the owner is away.
Qualifications:
Minimum 5 years of professional kitchen experience, including kitchen leadership responsibilities.
Strong scratch-cooking skills and experience preparing sauces, roux, seafood, and raw ingredients.
Ability to work multiple stations and maintain consistent execution during busy services with a small kitchen team.
Experience hiring, scheduling, training, and holding BOH employees accountable.
Strong understanding of ordering, inventory, prep planning, production quantities, and waste controls.
Comfort using restaurant technology and learning established systems. The operation uses Toast, xtraCHEF, and 7shifts.
Prior Cajun-Creole experience is not required.
Requirements:
Lead daily kitchen operations and directly supervise 5 BOH employees.
Actively cook during peak dinner services and weekend lunches while maintaining food quality and timely execution.
Follow established recipes and menu specifications. The position does not include creative freedom or menu-development authority.
Maintain accurate prep lists, appropriate production levels, and organized inventory.
Train employees, reinforce clear expectations, and maintain consistent sanitation and service standards.
Maintain a presentable, professional appearance appropriate for an open kitchen and guest-facing role.
Communicate comfortably with guests in English and help address guest concerns when the front-of-house manager is unavailable.
Demonstrate punctuality, dependability, organization, accountability, and a personable approach to team and guest interactions.
Work closely with an involved owner while building the ability to manage daily operations independently.
Work a 54-hour week with two days off.
