The Chef de Cuisine - Banquets leads all banquet culinary operations for a high-volume casino in Illinois, bringing strong kitchen leadership and culinary expertise to a dynamic, event-driven food and beverage program. This role is responsible for overseeing large-scale banquet production, ensuring exceptional food quality and consistency, and maintaining the highest standards of culinary excellence across all casino events and functions.
 
Qualifications

• Proven experience as a Chef de Cuisine or senior culinary leader with a strong background in banquet or event-driven operations within a high-volume casino, hotel, or similar hospitality environment
• Strong knowledge of large-scale food production, menu development, food safety standards, and kitchen organization with the ability to maintain consistency and quality across all banquet events and functions
• Demonstrated financial acumen with a track record of managing food costs, budgets, and kitchen operations to drive profitability and operational excellence in a high-volume banquet environment

Responsibilities

• Lead all banquet culinary operations for the casino, ensuring exceptional food quality, consistency, and timely execution across all events and functions that align with the casino's brand standards and guest expectations
• Develop and execute creative, event-driven menus that reflect a commitment to culinary excellence and deliver an exceptional dining experience across all casino banquet and catering functions
• Recruit, mentor, and develop a high-performing banquet culinary team while fostering a culture of excellence, teamwork, and continuous improvement in a fast-paced, high-volume casino environment
