Our client is launching an exciting new Italian deli in Hamilton and is seeking a passionate and experienced Head Chef to lead the kitchen from day one.

This is a unique opportunity to join a brand-new venture dedicated to authentic Italian deli cuisine. The successful candidate will play a key role in developing the menu, establishing kitchen systems, and building a high-performing team while delivering exceptional quality and consistency.

About the Role As the Head Chef, you will oversee all aspects of kitchen operations, ensuring efficient service, high-quality food, and a positive team culture. This hands-on leadership role is ideal for someone who is passionate about Italian cuisine and enjoys creating innovative dishes while maintaining traditional flavours and techniques.
Key Responsibilities

• Lead the day-to-day operations of the kitchen.
• Develop and execute a seasonal menu featuring authentic Italian deli products.
• Prepare and oversee the production of artisan focaccia, sandwiches, panini, salads, and ready-to-eat meals.
• Work with premium cured meats, cheeses, and traditional Italian ingredients.
• Develop recipes, recipe costings, and standard operating procedures (SOPs).
• Recruit, train, mentor, and manage the kitchen team.
• Manage ordering, supplier relationships, stock control, and inventory.
• Monitor food costs, labour costs, and minimise waste.
• Prepare staff rosters and ensure efficient labour management.
• Maintain the highest standards of food safety, hygiene, and cleanliness.
• Foster a positive, collaborative, and high-performing kitchen environment.

About You To be successful in this role, you will have:

• Previous experience as a Head Chef or Senior Sous Chef.
• Strong knowledge of authentic Italian cuisine and deli-style food preparation.
• Experience producing artisan focaccia and premium sandwiches.
• Experience working with high-quality cured meats, cheeses, and specialty Italian ingredients.
• Demonstrated experience in menu development and recipe creation.
• Excellent leadership, communication, and organisational skills.
• A strong understanding of food costing, inventory management, and labour control.
• A genuine passion for quality, consistency, and delivering an exceptional customer experience.

Requirements

• Australian work rights.
• Minimum three years' experience working with Italian cuisine (preferred).
• Minimum three years' experience as a Chef (preferred).
• Ability to reliably commute to or relocate to Hamilton, NSW before commencing employment.
