We are excited to assist one of Ireland's leading grocery retailers, with multiple award-winning accolades for their exceptional bakery items and appetising fresh food. Our client is seeking an experienced Pastry Chef / Bread Baker with a proven track record in a professional bakery, supermarket, convenience store, hotel, restaurant or artisan bakery environment. The ideal candidate will be highly skilled in both scratch bread baking or pastry production, hands-on, organised and confident working independently, with strong attention to detail and the ability to lead and support a bakery/pastry team. The successful candidate will be responsible for leading daily production, including sourdough, white and brown breads, baguettes, focaccia, brioche, croissants, Danish pastries, cakes, tarts and other viennoiserie and baked goods. You will be expected to maintain excellent product quality, meet daily production requirements and contribute to achieving sales targets. This role also requires someone who is Experience with production planning, stock control, waste management, HACCP and maintaining high food safety standards is essential. The store is situated approximately 20 minutes' drive from Lucan and Maynooth and the surrounding areas. Due to early morning bakery starts, a candidate who drives is preferred. • Lead and manage the daily production of artisan breads, sourdough, pastries, viennoiserie, cakes and sweet baked goods.
• Prepare all products from scratch, following established recipes and production standards.
• Produce a range of artisan breads including sourdough, baguettes, ciabatta, focaccia, brioche and speciality breads.
• Monitor dough temperatures, fermentation times, proofing and oven temperatures to ensure consistent results.
• Train, mentor and support junior bakers and pastry staff.
• Help manage stock levels, ingredient ordering, rotation and storage.
• Monitor ingredient quality and minimise waste.
• Maintain a clean, organised and efficient bakery and pastry production area.
• Complete production, temperature, cleaning and traceability records as required.
• Ensure equipment is operated safely and maintained to a high standard.
• Take responsibility for the bakery production team when required.

• 3-5+ years' professional experience in an artisan bakery, pastry kitchen, restaurant, hotel or similar environment.
• Excellent knowledge of sourdough, fermentation and artisan bread techniques.
• Experience producing cakes, tarts, desserts and other pastry products.
• Excellent understanding of baking temperatures, dough development and product consistency.
• Strong attention to detail and pride in presentation.
• Previous experience supervising or leading a bakery/pastry team is highly desirable.
• Good understanding of HACCP, food safety and allergen management.
• Excellent organisation and time-management skills.
• Ability to work independently and confidently in a busy production environment.
• Strong communication and teamwork skills.
• Ability to work early mornings, weekends and busy seasonal periods when required.
• Physically capable of working in a busy bakery environment.
• Formal bakery or pastry qualification is desirable, but strong relevant experience will also be considered.
