They have established themselves as a trusted name in the Irish retail market and they are seeking an experienced Butcher to run their day-to day shop operations. This shop is situated In a busy town in Co. Louth, just a 20 minutes' drive from Monasterboice and a 20 minutes' drive from Balbriggan. An ideal candidate will have a strong background in managing a busy retail butcher department or butcher shop, have strong knowledge of profit and loss margins and KPIs and have excellent leadership skills to keep the team motivated. • Lead, motivate and support the team to deliver consistently high standards of customer service and operational performance.
• Plan and manage staff rosters, ensuring appropriate staffing levels and effective allocation of resources.
• Monitor employee performance, provide regular feedback and address performance or conduct issues promptly and professionally.
• Monitor daily sales, stock levels, product availability, waste and margins, taking action where required to improve commercial performance.
• Maintain high standards of product presentation, cleanliness and shop floor organisation.
• Ensure all food safety, hygiene, HACCP and health & safety standards are consistently maintained.
• Handle customer queries and complaints professionally, ensuring a positive customer experience at all times.
• Identify opportunities to improve sales, service standards, efficiency and overall shop performance.
• Work closely with the Area Manager and wider management team to achieve company targets and business objectives.

• Minimum 2 years' experience in a retail management or supervisory role, ideally within food retail, butchery, deli, fresh food or a similar environment.
• Strong knowledge and understanding of food safety, hygiene regulations and HACCP requirements.
• Proven experience leading, motivating and developing a team.
• Excellent organisational and time-management skills, with the ability to prioritise effectively in a busy retail environment.
• Strong commercial awareness, including an understanding of sales, margins, stock control, waste and cost management.
• Strong problem-solving and decision-making skills, with the ability to remain calm and professional under pressure.
• Ability to work independently, take ownership and demonstrate initiative.
• Flexible approach to working hours, including weekends and busy trading periods, as the shop operates 7 days a week.
• Fluent spoken and written English.
• Previous experience in managing a butcher shop will be an advantage.
