Lead Butcher (Rail Breaking) - USDA Beef Processing Facility

We are hiring a Lead Butcher to join our USDA-inspected beef processing facility in Grand Bay, AL. This role is a great fit for someone with hands-on butchery or meat processing experience who is looking to grow their skills in a stable, team-focused production environment.
While rail-breaking experience is preferred, we are open to candidates with a solid foundation in meat cutting who are ready to take the next step.

Key Responsibilities
- Assist with and perform rail breaking and fabrication of beef carcasses into primal and subprimal cuts
- Trim, debone, and prepare meat products according to production and customer specifications
- Follow daily work orders for cuts, weights, and fat content
- Safely operate knives, saws, and processing equipment
- Support production of ground products and other specialty items
- Inspect product quality and ensure compliance with USDA and food safety standards
- Work closely with packaging to ensure orders are completed accurately
- Maintain a clean, organized, and compliant workspace
- Cross-train and assist in other areas of the facility as needed
Requirements
- Experience in butchering, meat processing, slaughterhouse, or packaging environments
- Willingness to learn rail breaking or expand existing skills
- Understanding of basic meat cutting and safety practices
- Ability to work in a cold environment (approximately 42°F)
- Reliable, team-oriented mindset with a strong work ethic
- Steel-toe boots required
